**** Handwashing sink in front prep area was being used to scrape dishes. When notified, facility stopped scrapping dishes in sink. Facility asked if they could convert handwashing sink into a utility sink. **** Facility had a bag of prepared chopped bacon in the deli cooler with a date label of 9-3 that went out of date after 9-9. PIC tossed bacon. **** - 3-501.17 (A-B) (E-G): (A)Except when PACKAGING FOOD using a REDUCED OXYGEN PACKAGING method as specified under § 3-502.12, and except as specified in ¶¶ (E) and (F) of this section, refrigerated, READY-TO -EAT, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD prepared and held in a FOOD ESTABLISHMENT for more than 24 hours shall be clearly marked to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded when held at a temperature of 5ºC (41ºF) or less for a maximum of 7 days. The day of preparation shall be counted as Day 1. Inspection Comments |
-Facility is now a high risk category, and had proper cooling of prepared potatoes in back fridge. CFPMs have allergen certification as well. -In the back freezer, there was baked and frozen bread that did not have labels. The PIC stated that bread is baked a day, used for a day as day old and then if remaining is frozen and cooked as croutons for that day. Please label these frozen breads with " Discard in 5 days when unfrozen" and in the future, label bread with the prep and freeze date to avoid any confusion. This will be checked in the follow-up. -A follow up will occur 9/19 for the ice machine -Before 1/1/25 please display allergens for items in the bakery window to adhere with changes in the food code: And here is the new code for "unpackaged food": 3-602.12 Other Forms of Information. (C) The PERMIT HOLDER shall notify CONSUMERS by written notification of the presence of MAJOR FOOD ALLERGENS as an ingredient in unPACKAGED FOOD items that are served or sold to the CONSUMER. |
